Cooking Basque Lamb in a spicy sauce:

Step 1: Prepare the lamb meat.

Choose lamb meat from sellers you trust or take constantly. It should be from a young lamb and the freshest. The main thing is to track so that the meat is not dry and stale. Initially, it must be cleaned of all excess fat and white films, rinsed thoroughly in running water and put to dry on a kitchen towel or dried with paper towels. Next, cut the meat from the bone and cut it into cubes of the size you need. It is advisable that these are not too small pieces. Put the meat in a bowl and fill it with water. In this form, leave the lamb on demand.

Step 2: Cook the bone broth.

We cut the remaining bone from the leg of the lamb into several parts. This can be done with a large sharp knife or a special kitchen hatchet. We put the bones in a large pot and completely fill them with water. We put the container on medium heat and bring to a boil. After we turn off the fire and boil the broth under the lid for 70-80 minutes. Subsequently, we remove the bones, and filter the resulting broth through a fine sieve or several layers of gauze.

Step 3: Cook the vegetables for the original dish.

Onions are cleaned and washed with cold water, then cut in half. Fresh carrots should be peeled and washed with clean water, then cut into circles. Scalp a ripe tomato with boiling water or lower it for 1 minute into a bowl with boiling water, after which we easily peel it. We will cut the tomato into slices. The apple must be peeled and cut into slices.

Step 4: Cook the meat with vegetables.

Pour 4 tablespoons of vegetable oil into the heat-resistant dishes and put the prepared vegetables (onions, carrots in slices and tomato), then send the meat and apples into slices there, put on a strong fire. All must be fried until golden brown on meat and vegetables. Stir constantly, the main thing is not to let the dish burn. We will cook about 15-20 minutes. After this, add broth. We make a low fire and stew the meat until cooked. about an hour and a half. From time to time, add broth. The lamb meat should become soft. Turn off the heat and remove the dish to the side in a warm place.

Step 5: Cook the spicy sauce.

Pour 2 tablespoons of vegetable oil into a pan and set on high heat. Next we send the finely chopped garlic, just as it can be squeezed through the garlic. Garlic should be golden crusted. Next, add vinegar to the pan and grated parsley root, cook another 1-2 minutes. We add there the juice that we formed during the preparation of meat and mix thoroughly. The sauce must then be filtered through a sieve or cheesecloth.

Step 6: Serve the Basque lamb in a spicy sauce.

Put the finished dish on a dish and pour in a spicy sauce. Such a dish can also be decorated with sprigs of parsley and dill. Good appetite!
